Eunice was born to William and Cora Koester in Northfield MN in 1941. She was the second eldest of a family of 7 accomplished siblings. She was a 1959 graduate of Northfield High School. Then continued on to the University of Minnesota,Twin Cities where she received a Bachelor Science degree in Interior Design. In 1963 she married Thomas Swanson also from Northfield and they raised 2 children Andrew and Sarah in Mankato. While in Mankato she turned her passion for design into a long and successful career working as a designer at Landkamers Furniture in downtown Mankato. Then later with her own business Classic Interiors. With both she found lifelong friends in her heartfelt profession.

Throughout her entire life she was a respected gardener that enjoyed spending vast amounts of time in her extensive gardens. Finding peace and happiness with every plant and flower. She had great pride and adoration for her beloved grandchild Anna Grace. As well as her extended family, friends and neighbors that she loved so dearly. All were a constant source of joy and happiness in her life and her memory will likely live on with each of them.

Eunice and her family want to extend a huge amount of gratitude to the extraordinary Oncology staff with Dr. Devineni at the Mankato Clinic and the West team with Mayo Mankato Hospice.

Eunice is survived by her husband, Thomas of 57 years; children, Andrew (Julie and Anna Grace) Swanson of Carlsbad, NM, Sarah Swanson of St. Paul MN, brother David of Dennison, MN, sister Joan (Thomas) of Denver, CO, sister Doris (Warren) of Mooresville, NC, brother Vernon (Joan) of Northfield, MN, sister Marcia of Denver, CO and sister Lois (Skip) of Northfield, MN. To My “Forever Friend” Eunice,
A little piece of me left this earth on Tuesday evening when you were taken to a more beautiful, carefree place - now pain free and at peace. I will miss you terribly. I will think of you each day and be forever grateful that I was blessed to have you in my life for 51 years. Rest In Peace forever more!

Eunie was a beautiful soul and a good friend. She was so fun to talk with and we often had good laughs. She knew I loved Doritos and always had a bag for just for me in the cupboard when I came to hang out with my dear friend Sarah. Her zest for life is a true inspiration for me.

Leona and I are lucky to have known and had Eunice as a friend. Her business name describes her well, She was a “Classic”. We loved that she tolerated Tom’s and my twisted “sense of humor” and advised us thru many decorating phases. A special tribute goes to Sarah as a caregiver and daughter. I am sure it made Eunice and the family grateful beyond words with her ability to spend the last couple of years at home and near her garden. Condolences to Tom, Andy, Anna Grace and Julie.

Dear Swanson family,
So very sorry to see the news of Eunice's death!
Will never forget how sweet, loving and kind she was to my parents (Rose and Sal Frederick) and always available, to advise and help them!
Eunice was so professional, and yet, like a good friend to them!
She had great style and always looked so nice!
Loving thoughts, and a long distance hug to all of you from me!
Sincerely,
Vicky McLaughlin

We got to know Eunice while visiting her neighbors. Whenever she was around there were smiles and laughter. She had so many stories to tell, it was amazing to listen to her. The little kids will never forget her backyard “wonderland” as they called it. Our deepest sympathies to Tom and all her family members ❤️

Eunice was not only a neighbor for 18 years she was a dear friend and we considered her family. So many fun neighborhood parties with Eunice and Tom, she was always the life of the party. Always so giving of her time; when we had a house or gardening question she would always drop everything and come next door to help us figure out what to do. Her floral arrangements she's made me throughout the years adorn my home and I treasure them. I would have to bring one back to her now and then as one would suffer a devastating blow by one of the dogs. She would laugh and fix it up better than the original. If the weeds got too bad in our yard you could expect to see her out there with her tub and tools. We would joke that "our gardener" is on site today. She introduced me to Cheetos and sour cream, who knew? Going to miss those summer days sitting in the Swanson's beautiful back yard, (Eunice with her iced tea and the plastic container over the glass to keep the bugs out) just sitting at the patio table chatting with Tom and Eunice, the boys having their beers, all of us enjoying the time spent together. Eunice taught me so much about flowers and plants over the years and how not to plant into the ground until after Mother's Day, a rule I still abide by to this day. Eunice meant so much to me and my husband, she is dearly missed. I could go on and on about all our memories and fun times. As I told her family, Heaven is a much more beautiful place now that Eunice is up there tending to all the plants and flowers. We love you Eunice. ~Jeff and Ronda Natysin

We share our age, our birthday month and our love for Easter Peeps. ( preferably yellow and stale). Her famous sugar decorated Santa cookies now grace my Christmas table too, only they are called “Eunices” cookies. They are ,of course, time consuming to make and usually hold up the family Christmas activities. Thanks to grandchildren now the task gets completed. Eunice was my most creative friend and she truly inspired me. She was the epitome of a good friend! Her kindness, thoughtfulness, and acts of good will will live in my heart forever.

Eunice will be sorely missed on this planet. She was a role model for keeping her house and gardens in immaculate condition and her hospitality was unmatchable. Her wit and warmth made all feel at ease in her presence and she kept each season secular and holy season with dignity, reverence, and beauty. Much love to Tom, Andy, Sarah and all extended family. Honored to have known her and praying for peace for each one grieving her great loss at this difficult COVID-19 time. With love from Texas- Kristin, Tom (and kids Calvin, Cora, and Chase)

Eunice was a delightful friend at Northfield High School where we played in the band and enjoyed many other activities together. We shared the Northfield Hospital Nursery when our mothers gave birth to me and then to her in 1941. It was wonderful to see each other in our hometown for class reunions. Living far apart (Eunice in the midwest and I living on the east coast), we had always hoped to find other times to reconnect. She lives on in my memories. I will never forget her with great fondness. My heart goes out to her husband, Tom and her children.
She left far too early and had so much more to give to all who knew her.

Tom, Andy, and Sarah, my deepest sympathies to you for the loss of your wife and mother. I remember her as a quiet, very patient especially when I came over to play, always supportive, and so kind. I never heard her raise her voice, say a bad word, or be negative. I remember her kindness in Nicollet at a baseball game we were playing and for some reason we didn't have water and it was a hot, muggy, dusty July day. Eunice pulled out a piece of trident gum from her purse and gave it to me to help. I never forgot that simple gesture and this is how I remember her.

Tom, to you and your children I offer heartfelt condolences at this time of Eunice's passing. Having recently lost a very dear member of my own family to cancer, I know a little bit about the grief that all of you must be feeling. How very wonderful, however, that Sarah enabled Eunice to be at home during her time of illness, surrounded by family and her lifetime of creative work. It must have brought her great comfort. To all of you I wish you blessings of peace as you journey through the inevitable waves of grief that will follow this lovely lady's departure from your lives.

Dear Tom and Family,
Please accept our deepest condolences. We are fortunate to have known Eunice. Though we haven't seen her in some time, we fondly remember her warm and generous personality. And, of course, who could ever forget the lavish and delicious presentation of food and goodies at the annual Christmas party hosted by she and Tom. With sympathy, Ken & Marlaine Smisek.

Chuck and I express our love and sympathy to the Swanson family, grieving the loss of Eunice. All four of us are Northfield High School graduates so we had a strong friendship for many years. And, Eunice and I were second cousins, so we had many family gatherings even as children. Eunice was such a good listener... she was positive and often had a quick but thoughtful response. She was my very petite second cousin and I was the older cousin, but also bigger! In high school we played together in a woodwind quintet ...Eunice on French horn and I played bassoon. We have so enjoyed staying in touch all of these years, and we will miss Eunice. Being the Mom of a caring daughter, I know for sure that Eunice so profoundly appreciated Sarah at her side serving so tirelessly for both her Mom and Dad in the past two years. God bless you Tom, Sarah, Andy and family.
