Peggy Chapman

Peggy Adele Chapman, 73, of Mankato, Minnesota passed away on June 13th, 2024 at 7:28pm. 

Peggy was born on April 1, 1951 in Grand Rapids, Michigan to Henry and Frances (Herbrecht) Sokol. Peggy was the third of four children in her happy and active family. As a child, Peggy was an avid golfer who enjoyed playing and winning many father/daughter golf tournaments. Annual family trips to Fort Lauderdale, Florida including stays at the CJ motel made for some amazing memories. Peggy had a diverse career in healthcare as a nurse ranging from hospitals and emergency departments to private doctors’ offices where she enjoyed helping and healing others. 

Peggy married Richard N. Chapman on December 22, 1973 and moved from Cupertino, California to Richardson, Texas to live closer to her parents and siblings. Peggy had three children who were her world. Peggy enjoyed her involvement in her children’s interests. She started as a Cub Scout Den Leader, hosting weekly meetings and organizing many activities, later serving as the committee chair for Pack 295 of Plano, Texas.  She was instrumental in the founding of Troop 295 in 1988, which is still active today. Troop 295 has over sixty Eagle Scouts, including Peggy’s two sons and a nephew.  Peggy also participated and led her daughter’s Daisy and Brownie troops. 

Peggy loved interacting and spending time with others. She enjoyed hosting holiday parties, block parties, birthdays, and any other event that brought people together for a celebration. Halloween was one of her favorite holidays; she loved bringing joy to all the neighborhood children by making homemade donuts and hot chocolate to give to all her trick or treaters. Needless to say, her house was THE place to be on Halloween! Peggy always opened her heart and home. She was a second mother to so many children in her neighborhood.  

Peggy was very crafty and creative. She made personalized birthday cakes for her children, as well as amazing crafts including hair bows, barrettes, ornaments, stockings, and mini Christmas trees. One of Peggy’s greatest points of pride were her five granddaughters. Peggy found immense pleasure in the hours reading, playing, and sharing her love with them.  

Peggy is preceded in death by her parents, her sister Dr. Pat Stewart, and her ex-husband Rick Chapman. 

Peggy is survived by her three children: Ricky (Erica) Chapman of Allen, Texas, Kevin (Cheryl) Chapman of Mankato, Minnesota, and Kristi (Bryan Dempsey) Chapman of McKinney, Texas; her granddaughters: Kate, Avery, Laura, Claire, and Alice; her brother-in-law Jerry Stewart; her brothers: Hank (Lori) Sokol and Don (Beate) Sokol of Plano, Texas; her five nieces and nephews and her three grandpuppies.   

Christian funeral services will be held at St. Paul’s Lutheran Church in North Mankato, Minnesota on Monday, June 17, at 6:30pm, with visitation beginning at 5:30pm. 

Internment and a memorial service will be held later this year at Restland Cemetery in Dallas, Texas.
